Nana Datashvili and her partner, Temure Plachiashvili, run a dairy and are responsible for bringing a new and unexpected type of cheesemaking to Georgia.
“We have twenty cows in the mountains above the Mtkvari River valley, ten kilometres from the Turkish border,” says Nana who is a trained veterinarian and also runs and teaches at the village school in Khizabavra, on the other side of the valley from the dairy. I was delighted to find that Nana speaks Italian, so we were able to converse easily.
