A. Beginning with the amount of flour you want to use:
Example: 50 kg or lb of flour
Example problem:
Flour 100% 50 kg or lb
Water 65% ? kg or lb
Salt 2% ? kg or lb
Yeast 1.5% ? kg or lb
Total 168.5% ? kg or lb
Calculate the other ingredients:
Water 50 x 65% = 32.5 kg or lb
Salt 50 x 2% = 1 kg or lb
Yeast 50 x 1.5% = .75 kg or lb
