  • About

Gursha is the Ethiopian tradition of wrapping a little morsel of the choicest foods in injera and popping it into the mouths of special friends, loved ones, and family as a sign of honor, love, and respect. If distance didn’t separate me from all the wonderful people who have contributed and helped me with this book, I’d reach over and give you each a giant gursha. Especially, I would like to thank the following: Amy Gedgaudas, Anson Berns, Anthony Kinik, Cynthia Combs, Dave Cash, Eric Smith, Erika Larson, Fikre Yibsa, Gabrielle Pope, Hirut Yibsa, Jacqueline Smith, Jennie Harned, John Plummer, Julie Hasson (and her infamous steamed seitan method), Kim Cannard, Lori D., Mesfin Hailemariam, Michelle Citrin, Michelle Schwegman, Miyoko Schinner, Paul Gailiunas, Sarah Kramer, and Wendy Berns (my sweet mama).
