Berbere is literally one of the yummiest spices I keep in my pantry. If you’re already a fan of Ethiopian food, berbere is probably one of the flavors you ruminate on while daydreaming about your favorite veggie platter. In case you’re unfamiliar with it, berbere is a spice blend made from moderately hot red peppers and a slew of other spices. It’s best known for its use in spicy red sauces and stews called kay wot. It can also be used to season all sorts of other kinds of food, from creamy salad dressings to pastry crusts. It’s one of the most predominant and notable flavors in Ethiopian cooking, and it’s worth making or seeking out (even if you have to special order it).
