The world of sausages is nearly as diverse as the world of barbecue. Sausages come both raw and cooked. Grill raw sausages for eight to ten minutes per side (sixteen to twenty minutes in all) over a medium fire. They should be cooked through. To test for doneness, insert the probe of an instant-read meat thermometer lengthwise through one of the narrow ends; the internal temperature should be 160°F. Already cooked sausages need only to be warmed on the grill.
