Creamed sponges have an unadulterated flavour of fresh, natural ingredients which is impossible to match in commercially made cakes. The best creamed sponge cakes contain all butter because it results in wonderfully moist, rich and springy cakes which are deservedly popular; a freshly made Victoria sandwich is the best cake of all. A true butter flavour is supremely important and it is worth spending extra. Sunflower margarine can be used but follow the all-in-one method.

Buttery sponge cakes are extremely versatile and suit anything from a children’s birthday cake to a fruity upside-down pudding cake for a family meal.
