Pyramids of more modest size can be constructed with many of the recipes included in this book. I would suggest glacé fruits, which are ideal for corner dishes or for elevating on low glass stands near candlelight. Also useful for this purpose are the recipes for peanut, almond, and hickory nut macaroons. Being lightweight, they can be stacked without crushing one another.

Individual glass stands may be used to call attention to certain decorative dishes, such as the Clear Toy sailing ship, a Gâteau de Pommes ornamented with almonds, Snow Balls, stacks of Chocolate Kisses, little piles of Olie-Koecks, molded puddings, Dutch Cake, and shallow pies like Pumpkin Pudding, which look very handsome when stationed above platters of darkcolored cookies.
