The word dessert comes from desservir, a French term that means “to remove that which has been served.” Essentially, it is what is offered to the guests after everything on the table has been cleared. The meaning has evolved to an extent, but the principle has not. Once your entrée or last course has been cleared, the utensils and all glassware have been removed, and the table has been “crumbed,” then the dessert is served.
