The sensation of taste begins in the mouth, where we begin ingesting our food in its initial physical form.
The tongue and teeth start to explore and investigate the food’s surface and physical character; simultaneously, they try to answer many questions. How soft does a roasted carrot feel? Is a chocolate chip cookie chewy or crisp? Will the peanut brittle yield to pressure from your teeth? This physical sensation produced by food textures is called mouthfeel.
