You can certainly purchase preserved lemons in most stores now, but for those of you who want to give it a try, here are two methods. Meyer lemons remain my top choice for this preserve because of their thin skins, but any type of lemon will work in this recipe. Before serving, rinse the preserved lemons under running tap water, then scrape and discard the flesh. Dice the peel and use as needed. You can blend it into mayonnaise, fold it into sauces, or add it to salad dressings.
