Having danced all around the steaming process to explore every nook and cranny, here in summary are the basic steps to steaming the Chinese way.

Step #1 Bring as much water as the steaming vessel can hold to a gushing boil over high heat, remembering that the water must not be allowed to touch the food or the plate on which it is steaming.

Step #2 Add the food to the steamer (either in its dish or placed directly on an oiled rack), protecting your hands and upper arms with long mitts, and positioning the dish in the vessel so that the steam can circulate freely and evenly all around it.
