We were just getting used to orange peppers and purple potatoes; then beets turned color on us, too. Now, alongside the familiar burgundy variety, we discover little baby beets, golden beets—even striped beets. We’ve tried them all and found there’s more to these beets than just cosmetic changes. Baby beets are the tenderest beet imaginable. Golden beets are almost as orange as they are gold, and this color doesn’t bleed—perfect for salads. Then there are the beets that are cherry red on the outside and striped on the inside—red and creamy white. This visually dramatic beet has a surprisingly mild flavor. Borscht has just become a whole new ball game.
