How to Cook and Peel Chestnuts

Peeled whole chestnuts, packed in jars or cans, are available in many supermarkets and specialty food stores. For those who prefer to use fresh chestnuts, the methods to prepare them are simple, although a bit time consuming.
Using the tip of a small sharp knife cut an X in the flat side of the chestnut shells. Place them in a saucepan of boiling water to cover. Reduce the heat and simmer for 20 to 30 minutes, depending on the size of the chestnuts. Test for doneness by piercing a nut through the X with the tip of a knife. They should be tender. Drain the chestnuts, allow them to cool slightly, then peel off the shell and inner skin.
