Fresh sweet corn is one of the season’s rewards and reason enough to weed the garden or watch the farmer’s market closely. Once picked, corn is best boiled or roasted as soon as possible, for the moment the cob is snapped from its stalk, the sugar begins to turn to starch. Purists say to put the pot of water on to boil before you pick the corn.
Corn is the all-American vegetable and we say when it’s available fresh, it’s worth a daily trip to the market.
