Parsnips belong to the carrot family, but they are creamy white and much fatter and larger than the carrot. While they can sometimes be quite assertive, especially if old and large, young parsnips have a sweet, nutty taste.
Parsnips are usually tucked away in some forgotten corner of the vegetable section at the market. But out of sight should not be out of mind, for their flavor is often just what’s needed for a soup, stew, or purée. Parsnips are an old-fashioned vegetable but perfect for the hearty dishes that get us through winter. So search them out at the market and enrich parsnips nutty flavor with sugar, butter, olive oil, cream, or spices.
