Although they share the name potato, there are many differences between a white potato and a sweet potato. Obviously, color is one. Sweet potatoes are indeed sweeter and are grown in warmer climates; white potatoes grow best in cool climates. The two of them have kept much of the world alive and continue to do so to this day.
We grow two main types of sweet potatoes in the United States. Although we refer to the more slender, deeper-orange-fleshed variety as a yam, it’s really not. The true yam is a much larger vegetable that is generally found in specialized produce markets.
