Sometime, somewhere, some kid must have turned thumbs down and nose up to yet another plate of eat-it-it’s-good-for-you overcooked spinach, whereupon the word went out once and for all that spinach and children were natural enemies. Ridiculous, we say. Spinach is not an acquired taste attained by adults. Eaten raw or briefly cooked, spinach is not only good for you—it also just plain tastes good. It is a deeply flavorful green to be enjoyed by the whole family.
