Eggs are sized jumbo, extra-large, large, medium, small, and even peewee, and they are weighed in ounces per dozen. An egg’s size depends on the hen that laid it—her breed, weight, and age. Most recipes are developed and tested for the ubiquitous large egg, but other sizes can be substituted. Here’s how to figure how many of each size to use.
