Today ripe pineapples are shipped to stateside markets from Hawaii, the Caribbean, Central America, and Mexico. They are available year round but the peak season is spring.
We find two varieties on the market. The small Red Spanish pineapple ripens to a red-orange color and has a taste that is more acid than sweet.
We much prefer the Cayenne pineapple, which is sweet, soft, and very juicy. Cayennes are picked ripe and shipped “jet fresh” from Hawaii, Mexico, and Central America. They are more expensive than the Red Spanish but well worth the price.
