The dramatic decisions that make up any good card game will sooner or later result in giant appetites, whoever is holding the aces. No one wants to spend too much time away from a winning streak, but everyone wants to eat. We suggest you make it hearty, a bit gooey, and delicious, so no one loses. (Recipes for italicized ingredients can be found in the Index.)
  • Put Ratatouille and Italian hot sausage on French bread.
  • Layer freshly sliced mushrooms, meat loaf, and Tomato-Basil Mayonnaise on pumpernickel.
  • Combine roast turkey with guacamole or Avocado Dip on pumpernickel.
  • Try roast Filet of Beef, tomato, cucumber with chives, prepared horseradish, and sour cream on white bread.
  • Layer prosciutto and Provolone cheese on Italian bread sliced lengthwise. Spread with Pesto Mayonnaise and broil open faced until hot and bubbly.
  • Spread crunchy celery rémoulade on rye bread; top with thin-sliced corned beef and even thinner slices of Swiss cheese. Run under the broiler until hot and bubbly.
  • Combine Black Forest ham, ripe Brie cheese, and your favorite mustard on Raisin Pumpernickel Bread. Butter the outside and grill in a hot skillet.
  • Mix crunchy-cooked broccoli, scallions, and toasted cashews with Sesame Mayonnaise. Spread on English muffins, sprinkle with grated Parmigiano-Reggiano cheese, and broil until hot and bubbly.
  • Layer turkey breast, avocado, and jalapeño Jack cheese between slices of sourdough bread. Butter the outside and grill in a hot skillet.
  • Spread rye bread with mayonnaise, make layers of sliced onion, avocado, tomato, mild green chiles, and 2 strips of bacon. Top with Cheddar cheese and broil until the cheese is hot and bubbly.
