The potato, available around the world, is a most comforting vegetable. It has held nations together in times of war and famine, and even today there are places where potatoes are eaten three times a day. The potato used to be considered common by some, but with russets, Idahos, redskins, fingerlings in every color, sweets, yams, Yukon Golds, and Yellow Finns in every size from pea to peewee football, there’s nothing boring about the potato any longer. Today potatoes grace the most sophisticated menus in restaurants and homes alike. Common? We don’t think so.
