To begin the day effervescently, there is nothing like Champagne. In fact, if the truth be told, we like Champagne just about anytime—before, after, or during lunch or dinner.

The drier the Champagne, the more we like it. Some people find sweeter Champagnes cloying, which is why we always look for “brut.” And while vintage Champagnes are truly quite wonderful, we’ve found some very delightful nonvintages from France, and methode traditionnelle or “sparkling” wines from California, Long Island, Oregon, and Michigan that have become our everyday bubblies. These are affordable enough for us to sip whenever the mood strikes.
