Coconut will help our brains and our metabolisms, and a proper piña colada couldn’t exist without it. Coconut butter is sold in a jar that will likely last you for ages, and I’m prone to using a spoonful of it, along with a blender, to create my own coconut-based liquids such as coconut cream and coconut milk. This eliminates the need for canned coconut milk or cream, since I try to avoid using cans at all in my culinary life, and I can decide with each drink I make exactly how thick and rich (or thin and sippable) I want it to be.
