Cooking is as simple as boiling an egg. That was the reassuring message suggested by the picture of Delia Smith on the cover of her original, best-selling book, Complete Cookery Course. Holding a smooth brown egg, plain, but perfect, this famous shot was sure to make everyone feel confident that great meals from little eggs grow.

And how that book sold. I swear it became the household bible of my generation and beyond, because it taught us all how to cook the classical basics, as well as daring new dishes such as Chilli con Carne, Moussaka and Coq au Vin. Now we could take everything in our stride, from rice and pasta, to bread, cakes, puddings and preserves. Sunday lunch or Christmas dinner? No problem!
