I chose to create recipes that cater for two persons from the start and which can easily be multiplied, rather than the more usual four servings in most books. This is because there are many smaller households not catered for in terms of cookbooks, and many of us tend to cook too much and be left with leftovers that don’t get eaten.
I have made a conscious decision to use the same ingredients in many of the recipes, so that you will not need a pantry filled with fancy ingredients to be able to cook from this book. Also you will minimise waste as one kilo of carrots, for example, will lend itself well to several of the recipes.
