One thing I learned in developing my Made by Lukas veggie burger business is that the prepared veggie burger mix is a versatile ingredient on its own—you can do more with it than just shape it into burgers. Make sliders, or crumble it up into a hot pan and treat it like a veggie taco meat, or pack it into a mini loaf pan; or, if you or someone you’re cooking for is an omnivore, you can use half veggie burger mix and half another ground protein to make burgers or loaves.
When I’m cooking for just one or two, I’ll portion out just a few burgers, then pack up the leftover mix in a Tupperware for future burgers. I can cook them up later in whatever form I please.
