On a recent evening, Veronica Salazar returned to her home and found her six-year-old daughter, Luana, sprawled on the floor playing with Legos. Tired after a long day on her feet, she bent down to move the Lego-person she’d nearly stepped on.

Luana chided her: “Mama! That’s not where the customers go. The customers have to make their orders over here. Come play!”

Veronica chuckled. After working on her feet for ten straight hours in her restaurant, she had come home only to be asked to pretend that she was in a restaurant again.
