Guisados are also the basis of communal taquizas—get-togethers where each guest brings their signature dish and the host provides fresh tortillas. You can try as many different tacos as you have friends, and it’s a common and easy way to bring people together (similar to an American potluck).
Ask each of your friends to cook either from the list of recipes here or any saucy recipe they think would make a good taco.
Make an extra-large batch of masa for tortillas. You can roll out the balls and keep them under a moist towel so they don’t dry out. Once your guests start to arrive, heat up the comal. Keep your tortillas warm by wrapping them in a towel and encourage guests to eat while they are hot. You can always pop guisados back in the microwave or oven to warm them back up as more tortillas get made and more guests arrive.
