Use a food processor to make quick work of chopping vegetables. Double up the prep by chopping extra vegetables for one or two other recipes one night and then storing them in an airtight container in the refrigerator until you need them. Or, depending on your daily schedule, you may be able to get a jump on dinner earlier in the day by prepping the ingredients.
