Choosing tofu and beans

Protein-rich tofu makes a welcome appearance in my cooking. I love how well it soaks up the flavor of the ingredients cooked with it and its meaty, satisfying texture. Tofu comes in varying densities, but I usually buy firm. It is solid enough to hold its shape while cooking, yet still moist in the center. Sold packed in water or in aseptic packaging, tofu should be drained, rinsed, and then drained again before use. I always choose organic canned beans for my weeknight cooking, as I find their flavor and texture to be superior to regular canned beans.
