When I’m eating vegetarian, it’s essential that the dinner be satisfying enough that I don’t feel deprived. I anchor meatless meals with a starchy gluten-free staple such as pasta, quinoa, potatoes, or polenta, and then add hearty ingredients like eggs, mushrooms, and lots of vegetables to keep meals exciting.
