I always ask my fishmonger to remove the bones from fillets, but occasionally a few are overlooked. To find stray bones, lay the fillets skin-side down on a work surface and run a fingertip along their length near the center. If you feel the tips of bones sticking up, either pull them out with clean tweezers or needle-nose pliers, or cut out stubborn ones.
