Leftover chicken is great to have on hand for quick, gluten-free dinners. I like to roast a whole chicken on the weekend, serve half of it for dinner, and then save the rest for meals during the week. Or, if you are aiming for leftovers, try recipes that call for chicken thighs. The dark meat stays juicy when reheated, while the white meat of chicken breasts can sometimes become dry. Leftover chicken works well in tacos, risotto, chopped salads, and more.
