A number of high-quality sausages on the market today are made from chicken and turkey. Used cleverly in risottos, gluten-free pastas, stews, and similar dishes, these poultry sausages can lend surprising depth to dishes without the higher quantity of fat so typical of sausages made from ground pork. As with all sausages, be sure that the poultry sausage is gluten-free; some sausage makers use products that contain gluten as fillers.
