Working with chicken breasts

In a handful of recipes, I call for halving chicken breasts horizontally to help them cook quickly and evenly over high heat. To do this, place the chicken breast on a work surface. Place your non-dominant hand flat on top of the breast to hold it securely, and then use a long, sharp knife to carefully cut the breast in half through the center parallel to the work surface.
