Many of the recipes in this chapter–and other chapters–call for sautéing. For best results, select a pan that holds the food comfortably with a little extra space. If the pan is too small, the liquid will collect rather than evaporate and the food will steam rather than sear. If the pan is too large, the oil will tend to smoke and burn.
