Whenever I cook beef, I like to use grass-fed, and knowing it has better nutrition than corn-fed beef makes it a good choice for weeknight meals. Naturally lean cuts of lamb are terrific alternatives to beef, and can lend its unique flavor to give dinners a fresh twist. If available, I choose young, grass-fed lamb, which has a sweet, fresh flavor. Pork is also a fine choice for healthful dinners. As with all my meat, I insist on buying pork from ranchers who raise their animals humanely, and I believe it is better for the environment and translates to a superior flavor in the meat.
