When setting up a grill for cooking meats, it is useful to leave a section of it free of coals. This creates a cooler area to where you can move food to help manage flare-ups, which are common when fat or an oil-based marinade hits the flames. If you have a gas grill, be sure to preheat it with the cover closed for 10–15 minutes before grilling.
