Slice pitted peaches and place in bowls. Top with whipped cream flavored with brown sugar, rum, and vanilla extract.
Cut ripe cantaloupe or honeydew into bite-sized pieces. Sprinkle with fresh mint and a splash of Port or Marsala.
Cut plums into thin slices. Scrape in the seeds from a vanilla bean. Add sugar and toss. Serve topped with Greek yogurt or frozen yogurt.
