Since my schedule is so full, I’ve started the habit of imagining new meals I can make with the leftovers of tonight’s dinner. My household consists of just two people, but I’ll often make recipes that serve four with the intention of having leftovers. Tossed with cooked rice, quinoa, or gluten-free pasta, and flavored with a bold vinaigrette or simple sauce, these dishes become welcome treats on subsequent nights.
