  • Hearty winter greens like kale and collards have a tough stem that runs up the center of their leaves. To remove it efficiently, fold the leaf in half lengthwise and tear the stem or rib away from the tender leaves on either side.
  • Winter is the best time for citrus fruit lovers. Try some of the exciting heirloom varieties like juicy Cara Cara oranges, sweet Satsuma tangerines, and tangy tangelos in salads and desserts.
  • To ward off bugs when your immunity is low, include fermented foods like kimchi, sauerkraut, and miso in your winter menus to help keep your gut flora healthy.
  • Incorporate tart and pungent ingredients like fresh ginger, hot chilies, tamarind, citrus zest, and blue cheese into dishes to keep meals interesting all season long.
  • One of my favorite winter treats is vanilla ice cream with warm rum-raisin sauce. To make the sauce, melt 2 tablespoons butter over medium heat. Add ½ cup (3½ oz/105 g) brown sugar and cook until dissolved. Add 1 cup (6 oz/185 g) golden raisins, ¼ cup (2 fl oz/60 ml) apple cider, ¼ cup (2 fl oz/60 ml) dark rum, 1 cinnamon stick, and ½ teaspoon salt and simmer until syrupy.
