Here you will find recipes for the most commonly used pastry doughs. I have included a recipe for puff pastry, which I really believe is worth trying to make (although ready-made versions are pretty good). You can’t beat its buttery lightness and the satisfaction of making your own is immense.
I use cold butter for my pastry but always bash it with a rolling pin to soften before adding it to the dough. Always roll on a lightly floured surface and just sprinkle a scattering of flour over your dough pat before you begin to roll. If your kitchen is very hot or it is a very hot day, cool down your work surface for a few minutes before you start (use a large roasting dish filled with ice). Enjoy making pastry!
