I wanted to include a simple puff recipe for those occasions when a light buttery pastry is needed but you don’t need to achieve the even height and lift of traditional puff pastry, for example when making Tarte Tatin or Eccles Cakes. Rough puff, or quick puff, as it is sometimes known will still teach you the basic turning skills as the dough needs to be turned to incorporate the butter.
