Margaret Mackenzie taught cookery in schools, before moving to live in the old Brin school house at Flichity, seven miles off the A9 west of Daviot on the B851 to Fort Augustus. The schoolhouse had a large garden which was a jungle but she cleared it and started growing and selling vegetables and herbs. Some of her customers said that they were picking out the raw bits from her pre-packed stir-fry packs to put into salads which is when she had the original idea (in 1986) of ready-to-serve salad bags.
