Pikelets and crumpets

Making your own pikelets or crumpets is very satisfying, and the perfect way to make use of sourdough starter discard. Pikelets are basically a slightly thinner crumpet, made without a ring (as made clear by Mrs Beeton's recipe, which offers both possibilities).
