Easy Orecchiette Recipes

Orecchiette (roughly translated as 'little ears') hails from Apulia in southern Italy. They are made by pressing fresh pasta dough with the thumbs to create the distinctive shape. Although typically served with a meat sauce, the recipes in this collection show this pasta is a great partner with seafood, broccoli, sheep’s-milk cheese, or tomato sauces.
