  • Heart of a small lettuce
  • ½ pt. picked prawns
  • ½ gill mayonnaise

Method

Wash and dry the lettuce very well—pick out the tiny leaves and break into very small pieces. Arrange in cocktail glasses. Put the prawns on top. Mix the mayonnaise with the tomato ketchup or purée—to obtain this rub one large tomato through a fine sieve. Add the vinegars and seasoning. Put over the prawns and garnish with a piece of lemon and a dusting of cayenne pepper.
