This is a different way of preparing eggs; the whisked whites set in a soft froth around the yolks.


  • 3 tablespoons olive oil
  • 375–500g (12oz-1


Put the olive oil into a large, deep frying pan over a medium heat. Add the sliced radicchio and stir for a few minutes until the leaves are just soft. Spread them on the bottom of a lightly buttered, shallow ovenproof dish and keep on one side. Set the oven to preheat at Gas Mark 7/220°C/425°F
