To me, rice salads often seem very dull. But wild rice – which isn’t really rice but a type of grass – has nutty-flavoured, chewy-textured black grains which make it perfect for eating cold. Adding the dressing while the rice is hot means that the rice absorbs the flavours and moisture of the dressing much more effectively. This is an easy salad for a party as it can be prepared in advance.
