As I am a great lover of mash, I find it hard to resist this Baltic version of bubble and squeak. I like to eat it with a fried egg on top and something fresh and crunchy on the side. Try my Fiery red cabbage slaw or Beaten-up gherkins for that palate-cleansing astringent tang, or you could just add a shop-bought gherkin or two.
